 Salmon Bites
We made these with the fresh caught Chinook (King) Salmon from Lake Michigan. We left the skin for a tasty treat.
 
8 oz    salmon, fresh, raw  
1/2 cup    Soy sauce made from soy and wheat (shoyu)  
4 tbsp    - Chipotle and Garlic Hot Sauce ( or your favorite brand)  
 
1 Heat the Canola oil in deep fryer to 400 degrees (~5 to 10 min) - Be sure to follow your deep fryer's instructions for the correct amount of oil and pre-heating time
2 What you will need: - Deep Fryer - Canola Oil - Mesh ladle - Paper towels - 8 oz of thoroughly thawed Salmon - 16 oz bottle Shoyu Soy Sauce - Chipotle and Garlic Hot Sauce ( or your favorite brand)
3 While the oil is heating, pat the Salmon dry with paper towels You may removed the Salmon skin if you like Cut the Salmon into bite size pieces, approximately thumb size pieces
4 In a medium sized glass or plastic bowl, mix well the Shoyu and Hot Sauce Place the Salmon pieces in the bowl and mix the Salmon pieces so they are well coated with the sauce Allow the Salmon to marinate for 15 mins - Do not let the Salmon marinate too long; the Salmon will become very salty Cover a plate with a triple layer of paper towel for draining the Salmon once it is cooked
5 When the oil is heated to 400 degrees, use a mesh ladle to ease the Salmon pieces to the oil - Gently shake the mesh ladel to be sure the Salmon pieces do not stick together - Do not put too many pieces of Salmon into the oil, the pieces may over cook when trying to take too many out of the oil.
6 Allow the Salmon to cook for ~45 seconds - Do not cook the Salmon longer than a minute - The longer the Salmon pieces cook, the DRIER they become Remove the the Salmon pieces as quickly as possible, place the plate w/ the paper towels and allow to cool lightly.
